This recipe is from "Light Take Five" cookbook. Easy side dish that could be whipped up in minutes.
- 1⁄3 cup white rice, uncooked
- 1 tablespoon onion, chopped
- 2 tablespoons butter (light, diet, fat-free)
- 1 cup chicken broth
- 1 (14 -16 ounce) can mixed vegetables, drained
- In a small saucepan, cook rice, onion, and butter for 5 minutes or until lightly browned.
- Add broth and cover.
- Cook for about 20 minutes and add veggies.
- Stir and serve.
