Mmm, we liked this. It was the first time I have made a kugel with rice and it was a big hit. I am saving this on my menu for Sukkot, a warm and sweet dessert will be perfect in the Sukka! I made one change though, used margarine instead of butter since I wanted it to be pareve (dairy-free). Made for Kugelthon 2010. Thanks for posting.

I didn't think this was typical kugel fare, but it is delicious. Everything blended so well together, and it just turned out so good. I just love it.

What a delightful recipe. Just the right amount of sweetness. The combination of apples, raisins and apricot jam was perfect with a little crunch from the almonds. I finely chopped my almonds which worked well for this. I know I'll be making this again. Thanks Bayhill

We enjoyed this kugel very much! I used two organic apples and shaved them thinly with a vegetable peeler. Cooked the rice in the microwave and didnt have almonds so used ground walnuts. It needed just a little something so I also added some freshly ground nutmeg and a good sprinkle of cinnamon. The flavors are amazing! Almost an apple pie flavor with the crunch of the nuts and rice. Thank you Bayhill for a wonderful treat!

This is simply delicious. Different from regular rice pudding, but this is a keeper.
