- 4 tablespoons unsalted butter or 4 tablespoons margarine
- 1 (8 ounce) package dates, pitted, hand chopped
- 1 cup granulated sugar
- 2 cups Rice Krispies
- 1 (3 1/3 ounce) can flaked coconut (not the kind in bags)
- powdered sugar, as needed
directions
- In a saucepan, melt butter.
- Add dates and granulated sugar and cook slowly, stirring constantly, until blended.
- Add cereal and coconut, stirring to combine.
- Remove from heat and let cool until you can handle the mixture without burning your fingers.
- Form into 1" sized balls with greased hands, then roll each into powdered sugar to coat.

A holiday must-have around here! I actually found a small tin of these in the back of the pantry, left over from last year (must have been intended as a gift, then got lost?) and they were still wonderful! A little stale, obviously, but delicious. I suppose all the sugar acts as a preservative? Great recipe.

These are the best! ...especially if you like dates, coconut, crunchy rice krispies and ease of preparation! I first acquired this recipe and made them in junior high home economics class back home in WV... early 1960's! One exception... we called them 'Skillet Cookies' because we made them in an iron skillet. They are a favorite 'Christmas Cookie' in our family. Thanx, Irishbaker :)
