Rice Con Queso

"The exact recipe from Frances Moore Lappe's "Diet for a Small Planet". Great for a buffet dinner. Prep time does not include cooking the rice or beans."

  1. I love this recipe and have been making it for 30 years. Before I began to reduce fat in our meals, I made it 2 or 3 times a month. Now I make it only occasionally but it's still terrific. Incidentally, the last time I made it I substituted quinoa for the brown rice, added chopped jalapenos and spinach. It was terrific. It always is. The print in the original cookbook is so small I began looking on-line, hoping to find the recipe so I could print it. Thanks so much for posting it.

  2. I have made this recipie since the 70's. I got it from a book call Diet for a Small Planet. I use canned Black eyed peas and cottage cheese. I use a full can of chopped chilies and it is even better the next day.

<p>This site has gotten so horribly bad over the past couple of years, I have stopped using it to manage my recipes and have gone over to using another one, which I have been forbidden to mention on Food.com. It's no secret that there are competitors; send me a message if you are in the same boat and would like to know. For now, I only frequent a few of the forums and that's it. The Titanic has sailed!</p>
