I love this tart dessert. You may make it in a baking dish or use the more traditional cast iron fry pan or spider.

  1. Preheat oven to 350 degrees F.
  2. In a ten inch baking dish (cast iron skillet).
  3. mix rhubarb, sugar and marshmellows.
  4. Sprinkle dash or two of cinnamon on top.
  5. Cream together, butter, sugar egg.
  6. Sift dry ingredients together.
  7. Alternately add dry ingredients and milk to creamed mixture.
  8. Add vanilla.
  9. Pour batter on top of rhubarb mixture.
  10. Bake for 40 minutes.
  11. Serve with whipped cream.
