This is my favorite way to eat rhubarb - has been since I was a kid. I bought some rhubarb today and wanted to make it so when I called my mom to find out where she got the recipe she said "From my head". Well, as it turns out, this is pretty much it! She adds the sugar about half-way through the cooking. We always just eat it as is, like you would applesauce. Yummmmmm!!!!

When I was growing up my Mom made this every spring. I love it! We used to dip graham crackers in it or serve it on top of a bowl of vanilla ice cream. One of life's simple pleasures.
