  • 12 lb chopped rhubarb
  • 12-34 cup sugar
  • 1 orange, grated zest and juice
  • 2 jalapeno peppers or 1 dried chili, seeded and chopped
  • 2 shallots, finely chopped


  1. Put all the above in a heavy pan and bring to the boil, simmer for about twenty minutes to thicken.
