Found this in the local Country Register magazine. It is very good.
Make and share this Rhubarb Pudding recipe from Food.com.
- 1 cup sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1⁄2 cup milk
- 2 cups rhubarb, cut up
- 1 cup brown sugar
- 1 cup hot water
- 2 tablespoons margarine, melted
- Mix sugar, flour, baking powder and milk together. Add Rhubarb. Stir and pour into 9" square pan (lightly greased).
- Mix topping together and pour over top.
- Bake 350F 45-50 minutes.

Unbelievable!! If I could I would give this recipe ten stars! This is ridiculously easy to make & surprisingly delish! I've been looking for a variety of rhubarb recipe's to try (my garden over-floweth this year) and this one is definitely a keeper. Thank you so much for sharing!
This was awesome. I really didn't expect it to be; no fat to speak of, high ratio of sugar to rhubarb and very few ingredients. Well it's tastes out-of-this-world, it's ready to slide into the oven in under ten minutes AND it's very appealing to look at. Awesome.
