Very good! I made them with a gluten free flour mix, using coconut oil, and used 2 cups of rhubarb. Yummy.

  1. In large bowl mix brown sugar, oil, egg, and vanilla.
  2. Add buttermilk, rhubarb and nuts, stirring completely.
  3. In separate bowl mix remaining ingredients. Stir until moistened.
  4. Topping:.
  5. Combine and mix until crumbly and sprinkle over muffin dough. Press inches.
  6. Bake at 400 for twenty minutes.
