Rhubarb Lemonade Spritzer (Candida Diet Friendly)

"This is from Delicious Living magazine. It's a nice soda substitute. The original recipe calls for 1 cup natural cane sugar. Use that if you can have it. Prep time does not include chill time."

  • In a saucepan, bring water and sugar to a boil.
  • Add rhubarb; return to a boil, then simmer over low heat for 5 minutes.
  • Add lemon zest and stir gently.
  • Strain into a bowl, allowing pulp to drain for at least 10 minutes without pressing.
  • Pour liquid into a pitcher and add lemon juice.
  • Refrigerate at least 1 hour. (It can be made several days in advance at this point and kept in the fridge.).
  • To serve, either mix equal portions of sparkling water and juice, or add 5 1/2 cups sparkling water to the pitcher, stir and serve with ice cubes.

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
