  • Place rhubarb into 3 quarts of water bring to boil reduce heat to a simmer; simmer for 1 hour.
  • Place tea bags in water the last 6 minutes.
  • Strain.
  • Place into a 2-quart pitcher and add sugar.
  • Chill in refrigrator; serve over ice.

  1. Easy and very good. Used an herbal ginger zing tea, and the full amount of sugar. This has a delicate rhubarb flavour which is quite nice.
     
  2. Excellent way to use rhubarb. I followed the recipe exactly I found the amount of sugar to be just right for us , not overly sweet. I used Earl Gray Tea bags. I will be making this again, thanks for sharing this recipe.
     
  3. Kym, I thought this tasted more like regular iced tea, than an iced rhubarb tea, and after adding it to a glass of ice, it really diluted the flavor of the tea all together. I think one should cut back on the water, (as 3-quarts seems a bit much) or perhaps add a bit more rhubarb. Also, I thought more sugar should be added as well. Kym, I'm sorry that I wasn't able to give this recipe a better review, but I'm glad to see others here really enjoyed the tea, and thank you for posting the recipe.
