- 1 cup flour
- 1 cup brown sugar
- 3⁄4 cup quick oatmeal
- 1⁄2 teaspoon salt
- 1⁄2 cup butter
- 4 cups chopped rhubarb
- 1 cup ackerman's rhubarb wine
- 1 teaspoon vanilla
- 2 tablespoons cornstarch
directions
- Mix flour, sugar, oatmeal, salt and butter and spread 1/2 of mixture into 9 x12 baking dish.
- Spread the chopped rhubarb for the second layer.
- Cook the wine, sugar and cornstarch until thick and pour over the top.
- Spread remaining 1/2 of oatmeal mixture over the top.
- Bake at 350 degrees for approximately 45 minutes.
