Big hit at my family reunion I didn't have to worry about bringing any home.Even the people who don't like rhubarb enjoyed this .It was very easy to make.Thank you for sharing this recipe it's a keeper for sure.
We loved the crunchy topping that the oatmeal made. I made as written except used 3 1/2 cups of rhubarb and 1 1/2 cups of strawberries sliced in half, and added 1/2 tsp nutmeg. Delicious recipe! Thank you so much for sharing. I will definitely be making this one again.
I eyeballed the sugar in the rhubarb, so maybe I used less... but it was super yummy! I did sub some coconut oil for part of the butter in the topping, and it made it nice and crunchy. Yum!
awful. one cup of sugar? so sickly sweet i couldn't eat it. what a waste of rhubarb.
Delicious crumble Nora. I doubled the topping as we like a lot of crumble. The tartness of the filling was just perfect. I will use this recipe often to use up my rhubarb. Thanks Nora for a great recipe.
I made it as written except used 6 cups rhubarb and 1 1/2 cups oats. The bottom, fruit part, and the oat topping, were both perfect! The little bit of cinnamon in the fruit was great, too. Next time I might try adding even more oats. I like my rhubarb recipes tart - I don't like it when too much sugar is added. I was worried 1 cup of sugar would still be too much, but it was perfect and the tartness of the rhubarb still really shows through. I also forgot about the 1 T water in the rhubarb, but I had partially thawed frozen rhubarb (from garden) so there was probably still some moisture in it. I used an 8 x 11.5 glass baking dish.
Really delicious! I used 6 cups of rhubarb as somebody else suggested, and did 1/2 sugar 1/2 splenda granular in the rhubarb mixture. I only had light margarine on hand, so that's what I used for the topping and it still came out great and saved a few calories....well it would have but it was so good I ate 2 servings!
