I make this a lot.A friend gave me this recipe a long time ago.My hubby is a diabetic so I use splenda for the rhubarb mixture and regular sugar in the topping.

  1. Mix the rhubarb portion and put in dish.
  2. Make the crumble and put on top.
  3. Bake at 350F for 30 minutes.
  4. Use a 8X8 pan.

We loved the crunchy topping that the oatmeal made. I made as written except used 3 1/2 cups of rhubarb and 1 1/2 cups of strawberries sliced in half, and added 1/2 tsp nutmeg. Delicious recipe! Thank you so much for sharing. I will definitely be making this one again.

I eyeballed the sugar in the rhubarb, so maybe I used less... but it was super yummy! I did sub some coconut oil for part of the butter in the topping, and it made it nice and crunchy. Yum!

awful. one cup of sugar? so sickly sweet i couldn't eat it. what a waste of rhubarb.
