Ingredients Nutrition

  • 5 cups rhubarb, cut in 1/2 inch pieces
  • 1 34 cups sugar
  • 1 tablespoon flour
  • 14 teaspoon salt
  • 1 12 teaspoons grated orange rind
  • 34 teaspoon orange rind, ungrated
  • 4 cups small bread cubes
  • 1 orange, cubed
  • 12 cup flaked coconut
  • 12 cup melted oleo

Directions

  1. MIX RHUBARB, SUGAR, FLOUR, SALT, GRATED ORANGE RIND IN A BOWL.
  2. ADD 2 CUPS OF BREAD CUBES AND 1/4 CUP MELTED OLEO TO ABOVE MIXTURE.
  3. PUT IN 8" X 8" X 2" BAKING PAN.
  4. COMBINE REMAINING BREAD CUBES, BUTTER 3/4 TSP ORANGE RIND, ORANGE CUBES, AND COCONUT.
  5. PUT ON TOP OF CAKE AND BAKE AT 375 DEGREES FOR 40 minutes.
  6. SERVE WARM.
