My dad loves rhubarb, so we always had many different rhubarb recipes when I was growing up. This is one of my favorites.

  1. Beat together the following ingredients: sugar, oil, eggs, buttermilk, salt, baking soda, vanilla, flour. Add rhubarb.
  2. Put 1/2 dough in 3 loaf pans (don't overfill!).
  3. Add half of topping.
  4. Add other half of dough, then the rest of the topping.
  5. Bake at 350 for 1 1/2 hours.

Made this a couple days ago & it was a BIG hit with everyone at work. This doesnt say what size of loaf pans to use. For the size I used this made two loafs with a little batter left over. Topping mix makes it a little bit like a coffee cake.
