  • preheat oven to 325 degrees.use paper towel or napkin dabbed with 1 tablespoon butter or margarine to lightly grease pan.
  • wash pumpkin,cut pumpkin in half crosswise,someone else will need to hold the pumpkin.
  • use spoon to scoop out seeds.dicard seeds.
  • place the pumpkin halves,cut-side down, on pan. be sure to use a pan with sides because pumpkin juices may ooze out.
  • bake pumpkin 45 minutes or until fork easily pierces the fleshy part.cool 10 minutes.
  • peel the skin off the pumpkin with a sharp knife.
  • put pumpkin in a bowl.
  • mash pumpkin withpotato masher or fork.
  • stir in 4 tablespoons butter,1/4 cup vinegar & 1 teaspoon ginger.
  • serve hot.
