I had never truly drained the kraut. . .what a great approach. All the flavors blended well. I cheated and used 2 slices of cheese (1 on top and 1 on bottom.
We make these grilled sandwiches about once a month! Very good! I use my electric griddle so I can make 5 or 6 sandwiches at a time... My son doesn't like kraut; so I always serve it on the side with the dressing. We prefer Thousand Island dressing with ours. Thanks for a great recipe!
Reuben's are easy to make-- I try to lighten up the fat & calories, whenever I can. Reduced fat Swiss tastes just as good. I made my own thousand island dressing with reduced-fat mayo, ketchup, relish and a dash of horseradish, for some kick. Of course, I used this sparingly, but this does make the sandwich complete. Ya just GOTTA make it on rye, though! My personal preference... Dill Rye.

I love reuben sandwiches served with a kosher dill pickle spear. Instead of plain rye, I like to use a marbled rye bread.
