Great, quick soup that uses ingredients we all usually have on hand. Loved this...I have to watch my salt intake, so I used all water instead of the broth but used a spicy chipotle salsa and there was plenty of flavor; didn't miss the broth at all. Love that this is healthy AND tasty. Thanks for a great recipe!

A keeper! Really delicious! I added 1 lb ground beef, 1/4 cup taco seasoning and a few shots of cholula...didnt use the corn. DH was recovering from dental surgery and I wanted to make him something easy to eat other than oatmeal or mashed potatoes and this was soooo good! Im keeping this in my reportoire...even for when no one is ailing, lol. Perfect for winter weather with some corn bread or crumbled saltines to soak up the yumminess.

OMG!!!THIS IS GREAT!! Wonderful flavor, easy to make, items that we always have on hand, no meat, and everyone in the family loved it!! I will be making this again & again & again &......The only things different are, I used Rotel tomatoes w/chiles and added crushed red pepper flakes. We put cheese & sour cream on top. This would be good with grilled Velvetta Mexican cheese sandwiches.

This is wonderful! I am a mum of four and have a bad flu this week. I wanted a soup to warm me. I didn't have the energy to make a complicated soup, but this was so simple I decided to give it a try. My 8 year old son and husband made this for me. I am not better, but I am feeling warm. A keeper, great to have on hand. Simple enough for a child to make with adult supervision. Thanks for posting Engrossed.

Delicious! I made as posted using hot everything and it sure was spicy hot. We loved it. I did throw on some sour cream before serving. We loved how the monterey jack cheese melted on this soup. Thanks for posting.

This is, by far, the best soup I have ever eaten! I'm addicted! I added 1 lb. browned ground beef and found I had no black beans on hand, so used canneloni beans instead. Otherwise followed recipe as written. Thank you, thank you, thank you!

yummy protein-packed soup!!! I added some leftover fajita chicken, chopped cilantro, about a tsp. of cumin, and omitted the salsa and 1/2 cup of water. The consistency was perfect without the additional water... thanks for an awesome recipe!

We loved this soup! I added some chipotle chili powder to make it a little spicier for our tastes. Thanks for sharing this quick and delicious recipe. We'll be having it again soon!

An excellent hearty, quick and low fat meal to make with whatever is usually in the cupboard! To start the soup I diced a small red onion and 2 cloves of garlic and sauteed with 1 tsp of olive oil in the pot prior to adding everything else in. I used 2 cups of chicken broth rather than the can and additional water as well as a squirt of chile paste to zest it up a bit. I had some leftover chicken so I shreaded that up and tossed it in as well. Yummy and this one is definitely going into my "Favorite" file.

Delicious, easy soup. Made as written except used beef broth instead of chicken or vege, also, didn't have the green chilies. Served with cheese and sliced avocado.

What a great quick soup! These are ingredients I always have on hand so this will be made often around my house! The flavors combined wonderfully well! I accidentally used creamed corn instead of regular, but the accident turned out very well ~ I might even do it the same way next time! I topped with lots of a Mexican blend of cheeses. Thanks so much for this soup-er simple soup, Engrossed!

This is an excellent soup! I threw in some sautee'd onions and garlic, and I'm not a cilantro fan so I left it out, otherwise followed the recipe. Super easy and good, a real comfort dish. Thanks for a keeper!

I made this soup for last nights dinner. I added some ground beef since I was making it for DH. I couldn't find spicy refried beans and used medium instead. The grocery was out of cilantro, unfortunately. I used chopped green onions as a substitute and I used about 1 tsp of cumin. It was a very enjoyable dinner. Thanks.

This was really easy and quick. I doubled the recipe and put everything in the crockpot except the corn (which I added about 15 minutes before serving). I didn't add cheese or cilanto. Thank you for this recipe.

Quick and easy, but very flavorful. Reminiscent of a chili. I used 2 tablespoons of the cumin, roasted corn, and added 2 cloves of garlic. Like other reviewers, I ommitted the water. I could see lots of other ingredients working well with this too, like shredded chicken or ground turkey, or topping it with avocado or fresh tomatoes. Topping this with nonfat sour cream is a must though! It really complimented the flavors. This was a very satisfying meal!

I added a tablespoon of taco seasoning, didn't add the green chilies and "sold" it to the kids as Taco Soup. They enjoyed it!

This is an incredibly easy soup and soooo good! I made a few changes...Instead of the water used more chicken broth, 2 cans of vegetarian refried beans, 1 onion chopped, 1 tsp of garlic, I used diced tomatoes with jalapenos, 1 can of dark red kidney beans. I added the following spices besides the cumin; red pepper, chili powder and chipotle seasoning to taste. (We like things on the spicer side!) I used our own spicey salsa. This made for a delicious soup. We served with mexican shredded cheese, sour cream and scoops totilla chips. Thanks so much for a really fantastic recipe. We will make this again!!

amazingly simple and good! I doubled the recipe and added some chopped red and green onions. They added a nice texture (and a little crunch as I did not saute them first). I also had a can of chipotle peppers in adobo sauce that I have been wanting to use and I pureed 4 of the smoked peppers with a couple spoonfuls of the soup in my mini processor for a nice added "kick"!!

This soup is just the thing for a cold, wintery day. I did not feel like running to the store so I made the following modifications: I did not have any black beans, so I subbed chili beans and I omitted the green chilis as I was out of them. I did add some dried minced onion, a little chili powder and just a couple of drops of liquid smoke. Otherwise made to recipe and served with mozzarella cheese and tortilla chips. This one is a keeper!!
