  • Preheat oven to 350 (F).
  • Mix sugar, margarine, mint extract, and egg in large bowl.
  • Stir in flour, baking soda, and salt.
  • Stir in mint chocolate chips.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  • Bake 11-13 minutes, or until light golden brown.
  • Cool slightly; remove from cookie sheet and cool completely.

  3. My DD made these and since she didn't have mint chips she added 2-teaspoons of mint extract. She also reduced the sugar and replaced it with 1/4 cup of Splenda. She also added white chocolate chips.
     
  4. Very nice mint taste, I added only 1 cup of sugar as I don't like a real sugary taste, the cookies tasted perfect!
     
  5. I gave a slightly varied version of these out with my Holiday treat plates. Minor changes were a bit more extract, extra aprox. 1/4 cup of flour(I guess because of the extra liquid it needed it to thicken up for me a bit more)I also wanted to make them sort of like peppermint candy-canes to contrast the chocolate, and nut flavors of the rest of the plate. So I used white chips (12 ounce bag- I'm heavy handed) and added red food coloring. Refreshing is the perfect word for these, they were different and quite a hit!

Tweaks

  1. These are a delicious and different twist on the normal chocolate chip cookie. I used a 12 ounce bag of semi-sweet chocolate chips instead of the mint ones, and I increased the peppermint extract to 2 tsp to compensate. My husband loved these! Thank you
