We served this at my daughter's wedding and it was a perfect starter for an outdoor August meal. Simple and delicious.
- 4 cups watermelon, cubed
- 2 cups English cucumbers, sliced
- 3 tablespoons of fresh mint, chopped
- 1⁄4 cup lime juice, fresh squeezed
- 1 -2 teaspoon balsamic vinegar (optional)
- 2 mint leaves (to garnish)
