Red, White and Blue Salad

Happy Independence Day Everyone!!! This is not too time consuming, but worth every minute spent. A great jello salad for celebrating July 4th. Make sure to read the directions carefully and dont start the next layer until the previous one is solid.

  1. First layer: Dissolve 1 pkg Raspberry jello in 2 cups hot water.
  2. Pour into clear 13x9in baking dish.
  3. Chill until completely set.
  4. Second layer: Soften Plain gelatin in cold water.
  5. Heat the coffee cream and sugar over low heat.
  6. Remove from heat and stir in the plain gelatin mixture.
  7. Add vanilla, softened cream cheese and chopped nuts.
  8. Put on top of SOLID 1st layer.
  9. Chill until completely set.
  10. 3rd layer: Combine 1 pkg Raspberry jello with 1 cup hot water until dissolved.
  11. Add blueberries, juice and all.
  12. Put on top of SOLID 2nd layer.
  13. Chill until completely firm.
  14. Enjoy!

Sorry, but I made this for the 4th and the famliy just didn't like the filling. I was surprised because we all love nuts but it just tasted strange.

I remember tasting this recipe at a church picnic in 1976! I believe it originated in the Woman's Day magazine. I remember how much I loved it, but never had it since. I'm so happy to finally have found it! Thank you, Laurie!

Absolutely delicious--we will be having this often. No need to wait till 4th of July. I did try some subsitutions in this recipe and some worked and others didn't. I used strawberry jello instead of the stated flavor and skipped the nuts. Instead of a can of blueberries I used a package of fresh blueberries and cooked them for a few minutes with 1/3 cup sugar and some water. The subsitution that didn't work for me was in the second layer I tried using 1% milk instead of cream--it just didn't work well and didn't get firm--so then I made another mistake instead of waiting went ahead with the third layer. The result--delicious but the second layer didn't become firm--however this also got a round of applause from the family and will be making it again--next time following the directions.
