ingredients
- 1 1⁄3 cups flour
- 1 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 teaspoon melted butter
- 2 beaten egg yolks
- 3⁄4 cup red stripe bold beer
directions
- In a mixing bowl, mix all ingredient, gradually add beer. Allow batter to rest, cover and refrigerate for 3 - 12 hours.
- Just before using, fold in 2 egg whites stiffly beaten (optional).
- perfect for fish fingers or chicken nuggets.
- dip chicken or fish into flour as you would do for frying then dip it in the batter and deep fry until golden brown.
- goes well with relish le'ajeen.

Runner Chef of the Caribbean 2007, distinguished Jamaican Chef 2008. Gold medalist in local culinary competitions and the list goes on.
