Very easy and delicious. I added more garlic and cumin because I love those flavors. This is a great veg main dish when served with your favourite grain (i used a combo of barley, rice, and spelt) and pairs well with spinach. You can make a spicy version that is also good by using diced tomatoes with green chilies. This dish is even better reheated after a day.

  1. In a large skillet, over medium-high heat, heat the olive oil, then saute the garlic until golden, about 2 minutes. Reduce the heat to low and add the remaining ingredients; cook for 15-20 minutes and serve immediately.
