Beautiful, fresh flavours. A great combination I found in Rude Food, Nude Food, Good Food by Jenny Morris
- 3 large mangoes, peeled & sliced
- 2 red onions, peeled & thinly sliced
- salt & pepper, to taste
- 2 cups rocket
- 2 garlic cloves, crushed
- 65 ml olive oil
- 15 ml lemon juice
- Sprinkle the onion with salt & leave to stand for 1 hour.
- Mix all ingredients together and season to taste.
