- 473.18 ml coconut milk
- 14.79-59.16 ml red curry paste (to taste)
- 118.29 ml chicken stock
- 59.16 ml fish sauce
- 29.58 ml brown sugar
- 118.29 ml zucchini
- 118.29 ml sugar snap peas or 118.29 ml snow peas
- 118.29 ml mushroom
- 78.78 ml bamboo shoot
directions
- Combine 4 ounces coconut milk, curry paste, stock, fish sauce, and sugar and bring to a boil.
- Simmer for 15 minutes.
- Add vegetables and remaining coconut milk and simmer an additional 15 minutes.
- If using snow peas, add just before serving.
- Serve with rice.
