  • Reserve water from cooking the beets, just in case you want to thin the soup out a bit.
  • After the beets are cooled, either leave them in the pot and use a stick blender or, better, place in your blender on steroids or food processor.
  • Add everything else and blend well.
  • Taste and adjust.
  • Enjoy!
