A friend made this recently and just went on and on about how good it was. I have no measurements so you will get to "wing it."
- Reserve water from cooking the beets, just in case you want to thin the soup out a bit.
- After the beets are cooled, either leave them in the pot and use a stick blender or, better, place in your blender on steroids or food processor.
- Add everything else and blend well.
- Taste and adjust.
