Red Chili Biscuits

- 473.18 ml all-purpose flour
- 14.79 ml baking powder
- 2.46 ml baking soda
- 14.79 ml granulated sugar
- 4.92 ml kosher salt
- 88.74 ml chilled unsalted butter
- 236.59 ml cheddar cheese, shredded
- 14.79 ml chili powder
- 236.59 ml chilled buttermilk (may need to add more, enough to moisten batter)
- 29.58 ml melted butter, for brushing tops
directions
- Mix the flour, sugar, baking powder baking soda, salt and chili powder together.
- Cut in the chilled butter until it looks like fine meal.
- Add cheese and buttermilk. (You may need a little extra buttermilk to reach the moistened stage).
- Mix until flour is moistened.
- Place mixture on a floured surface, knead lightly, about 15 turns.
- Roll out to 3/4 inch thick.
- Cut with 3 1/2 in cutter (Or use whatever size you want).
- Gather up scrapes and roll into ball and roll out again to 3/4 inch thick and cut additional biscuits. Continue until all the dough is used.
- Put biscuits onto a greased pan.
- Brush the tops with butter.
- Bake at 400 degrees F for about 25 minutes.

These are very, very YUMMY biscuits with a really GREAT TEXTURE-so light and fluffy with a crisp crust. The cheese and chili also make for a really good taste, but for me they were just a little too hot (sent my mouth on fire), so that I cant give them a full 5 stars. I had read the other reviewers' comments so I thought they wouldnt be too hot even though there is quite a lot of chili powder in them, but somehow mine were smoking. Maybe its just the very high quality chili I used (an Italian brand). Next time I will reduce the amount used to 1/2 tbs and then these will be PERFECT! Thanks so much for sharing this winner with us, Nimz. Made and reviewed for Went to the Market Tag Game May 09.

Fabulous biscuits! the only change I made was i used frozen butter that I grated into the flour mixture instead of cutting it in with a pastry cutter, this makes for a really light biscuit, I also increaed the chili powder slightly (the hotter the better lol!) thanks for sharing this recipe hon!...Kitten:)

You people with your cilil powder & other hot spices, etc ~ You're making me re-evaulate my dislike for hot [or SLIGHTLY hot!] foods! I was very much tempted to cut back on the chili powder used here, but I didn't & I'm glad I didn't! The biscuits were very, very good & the taste was NOT too hot! Thanks for sharing, & I'll enjoy them again, I know!

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member. It's just a tad boring now and just another recipe site like all the rest. Sad.
