Red Cabbage Salad With Feta Cheese and Olives

"This is a really morish salad, rich in flavour. It is great served with just about anything! And an all time favourite of many to whom I have served it too. Also a good salad to prepare in advance - infact it's better if it is - (the 'older' it gets, the better it gets!!!!)"

1 large quantity of Red Cabbage Salad

  • Combine all salad ingredients together- one or two at a time- EXCEPT the Cherry Tomatoes and toss WELL.
  • Combine all DRESSING ingredients together in jar or bottle and shake well, and taste.
  • Drizzle dressing a little at a time over salad, and toss well to coat the salad evenly.
  • Add the halved Cherry Tomatos last.

  1. I love salads you can prepare in advance. I skipped the onions since I'm not a fan, and was out of olives so l left them out as well but will definitely add them in next time because I know they will go great with the feta. Thank you.
     
  2. I did not have a red or a green bell pepper, but I did have 1 yellow bell pepper. I also only had kalamata olives, so I used them in place of black olives. I just realized I forgot to include (the optional) clove of crushed garlic, however, this was a really nice salad! I can't wait to let the flavors marinate a bit and try it again. This was a great way to use the red cabbage and cherry tomatoes we have overflowing from our garden this summer. I actually only made half the recipe for the dressing, & I added some oregano & ground black pepper to the dressing, just because I like that combination (the dressing is almost identical to one I make homemade all the time). I probably used only half of the amount of Feta called for, but for me, it was plenty! Thanks for sharing this healthy recipe.
     
  3. I have made this for years, it is in my old red Betty Crocker cookbook, called Confetti Slaw! A cousin just asked me for the recipe, and rather than type it all out, I looked for it online! I agree, it is better with age, and EVERYONE loves it - it is pretty too!
     
  4. This salad was totally AWESOME! This is my first time EVER using red cabbage. Since I love olives, I got carried away and also added green olives minus the pimentos, other than that I followed the recipe as written and it was absolutely DELICIOUS! Thank you Karin, I'm adding this one to my recipe files.
     
  5. Thank you for a delicious and beautiful recipe. I had orange and red peppers on hand, but not green. Beautiful colors! My husband has requested this dressing for other salads as well.

I live in New Zealand, I'm married and my husband and I have no children....but we do have a dog (Bruno the Poodle), and a cat (Gus the Birman)! Back in November 2000, I resigned from a 17yr career with Air New Zealand as a Purser. I am now working as a Private Investigator with my husband - having his own Investigation Company. The work is varied and at times very rewarding as I'm sure you can imagine! I have an absolute passion for shoes...what woman doesn't??!!!, and fashion generally, including that of Home Interiors and furnishings, and gardens. I enjoy, among many past-times, art, gardening, water ski-ing, power walking, and ofcourse...COOKING!!(and entertaining). I guess my pet peeve would be running late for an appointment somewhere! 10 minutes early = 10 minutes late with me!! So, ON time is VERY late!!! If I had a month off - no work, and no responsibilities I would buy 2 return airfares to Honolulu!! And spend 2 weeks on Waikiki Beach with my husband and 2 weeks at home in the kitchen!! And entertaining friends and family.
