Red Cabbage Salad in a Crunch

This is a perfect warm-weather salad - really fast and easy so you can get out of the kitchen and outside! Try as a quick weeknight side with your favorite grilled meat. I came up with this one night when I needed something to go along with some fresh tilapia fillets. Threw some stuff together that was in the fridge and voila! Red cabbage, in particular, is a great source of phytonutrients and antioxidant polyphenols (protect brain cells). All cabbage tends to be fairly inexpensive and has many health benefits.

  1. Chop cabbage in fine strips.
  2. Mix vinegar, pesto, salt and pepper together as your dressing.
  3. Toss well and chill until meal time!
