This is very quick and easy to make. Good served with cornbread.
- 12 (16 ounce) jars roasted red peppers
- 1 cup butter
- Remove the red bell peppers from the jar and pat dry.
- In a food processor, put some or all of the roasted red bell peppers and puree until smooth. Some bits are OK.
- Add the butter and puree again.
- Serve with cornbread.
