I worked in New Orleans for several months. They really do have it every Monday (wash day). It is sooo good and sooo easy. One of the locals gave me their recipe and I've used it ever since---but not every Monday!

  1. Soak beans overnight.
  2. Add salt pork to beans. Cover and simmer 45 minutes.
  3. Stir in next 10 ingredients. Cook one hour.
  4. Brown sausage and drain. Add to bean mixture.
  5. Cover and simmer 45 minutes, adding more water if needed.
  6. Serve over hot rice.
