  • Remove wide strips of yellow zest from lemon with a veggie peeler.
  • Place lemon strips, oil, garlic and red pepper flakes in hot saucepan.
  • Cook over low heat until the oil simmers. Let it simmer 2 minutes. Remove from heat and cool for 30 minutes to 1 hour.
  • Trim stem ends from the green beans. Pile them in a large bowl.
  • Remove lemon zest from the oil.
  • Crush vitamin C tablets to a powder. Add that powder and salt to the oil and mix well.
  • Prepare the grill for direct cooking over medium heat (350-450). Preheat grill pan over direct to medium heat for about 10 minutes.
  • Pour oil mixture over the green beans. Toss til well coated.
  • Using tongs shake off excess oil and spread green beans on the grill pan in a single layer. Grill over direct medium heat with lid closed as much as possible until browned in spots and crisp-tender (5-7 minutes) turning occasionally.
  • Remove from pan and season to taste with salt and freshly squeezed lemon juice.
  • Serve Warm.
