Real Simple. Fresh Spinach. Fresh Lemon Juice. Fresh Garlic and you have a nice side dish.
- 2 lbs spinach
- 1⁄2 cup lemon juice
- 1⁄2 cup water
- 3 thinly sliced garlic cloves
- 1 teaspoon kosher salt
- Combine all except spinach in pan.
- Bring to a simmer.
- Add spinach in batches and cook until just wilted.
- If you have left overs use the spinach for other recipes.
Love spinach, love garlic, love lemon. This was pretty good but it seemed to be too much lemon, it was very acidic. I'll play around with the recipe in the future because it has all the good ingredients!
Yum! I liked this a lot, DH, never the lemon lover, not so much, but I LOVED that fact that it was simple and SO low fat... excellent for keeping me on track in the healthier eating plan.
