Old fashioned fudge like your grandma used to make -- no condensed milk, no marshmallow creme, just the basics. Follow the directions precisely and you'll have a delicious, non-grainy fudge. Stirring at the wrong time causes graininess, so follow directions.

Ingredients Nutrition

  1. In a heavy saucepan over medium heat, melt chocolate with milk stirring constantly until chocolate is completely melted.
  2. Add sugar, salt and corn syrup to saucepan and stir just until mixture comes to a boil.
  3. STOP STIRRING when mixture boils.
  4. Clamp candy thermometer on side of saucepan and let mixture boil to temperature of 238 F.
  5. Remove from heat immediately.
  7. Add butter, without stirring, to chocolate mixture.
  8. Let cool to at least 110 F, then add vanilla.
  9. Now it's time to stir.
  10. Beat mixture by hand or with hand held mixer until fudge loses it's glossiness and thickens slightly.
  11. Pour fudge onto a waxed paper lined 9 inch pan and let set for a few hours.

Sorry-I had high hopes for this recipe, I thought I might get old fashioned fudge, I followed this recipe to the tee...I got tootsie rolls...not even close to fudge more like candy. I also burnt out my mixer and wasted $6.00 for the butter & chocolate. I think I will just buy it from the gourmet shop from now on if I can find one in my area....sorry!
