    I think I got this recipe from "The Maker's Diet" by Jordan Rubin. It's pretty good and it is raw, but with the honey it is not vegan. You could always substitute sweeteners to make it vegan.

    Directions:

      This bark is made in a bowl sitting in a hot water bath.

      To do this, fill a large bowl half way or so with very hot water.
    3. 3
      Place your mixing bowl in the hot water.

      Add the coconut oil, as it melts, add in all of the other ingredients.

      Mix until blended.
    6. 6
      Pour into an oiled pan and let cool.

      Break into pieces and enjoy.

      I was looking for a simple recipe to use virgin coconut oil in. I want to take more every day. I cut the recipe in half and used ground almonds and about 1 tsp of vanilla. This is fantastic, if you like carob. If not, just use cocoa. Carob is so much better for you, and you could even give some of this to your dog as a special treat (all the ingredients are safe for dogs). I put it in a cake pan and in the fridge for 1/2 hour, and it came out firm, but I couldn't get it out of the pan without scraping. It's almost like truffle consistency. I don't feel guilty about eating this, as it's not a ton of sugar either.
