Ratatouille for a Crowd

"Vegies for a crowd of 50 or more! Good for food service folks or a family reunion. This is a colorful and delicious French vegetable stew that can be enjoyed hot or cold."

ingredients

• 59.14 ml olive oil
• 59.14 ml margarine
• 1510.46 g onions, sliced
• 29.58 ml garlic, minced
• 3628.73 g tomatoes, peeled,seeded and diced
• 2721.55 g eggplants, peeled and diced
• 2381.35 g zucchini, cut into 1/2 inch slices
• 566.99 g green peppers, julienned
• 7.39 ml salt
• 9.85 ml pepper

directions

1. Put oil and margarine in a deep skillet.
2. Saute onions and garlic over medium heat until golden.
3. In a large, heavy pan, layer the ingredients as follows: 1/2 the tomatoes, then eggplant, zucchini, peppers, onions, and garlic.
4. Repeat with second layer.
5. Simmer covered, over low heat for 35-45 minutes.
6. Uncover and continue to cook 10 minutes longer to reduce liquid.
7. Serve hot or cold.
