Raspberry-Lemon Muffins

"The marriage between the sweetness of the raspberries go well with the tartness of the lemons. Makes a tender muffin. You can use fresh or frozen raspberries. You can also use corn oil instead of the canola oil. Be careful not to overmix the batter or it will become stiff!"

  • Preheat oven to 375 degrees F. Spray or line 12 cup muffin pan.
  • In a bowl, stir together the flour, baking powder, cinnamon and salt. Set aside.
  • By hand or mixer: In a large bowl whisk together until blended the eggs and milk. Add the oil, brown sugar, lemon zest, lemon juice, vanilla and almond extract until combined. Add the dry ingredients and stir until combined. Do not overmix! Fold in the raspberries.
  • Spoon the batter into the prepared muffin cups, filling each to within 1/4 inch of the rim. Bake until a toothpick inserted into the center of a muffin comes out clean about 25 minutes if you use fresh berries and 25-30 minutes if using frozen berries. Transfer to a rack and let cool in pan for 15 minutes. Then turn them onto the rack to finish off cooling. Serve warm or at room temperature. Store in airtight container for up to 3 days.

  2. These muffins were quite good. We don't like them too sweet, so the amount of sugar was just right for us. I like that this recipe uses only oil for it's fat. I did decrease the fat by subbing out 1/4 cup of oil as applesauce and using nonfat milk. I also doubled the lemon juice to bring out that flavor more. You could taste the lemon, but it is subtle. I didn't mind the cinnamon being a backdrop flavor, but I did want to taste the almond, so I tripled the almond extract. I also topped these with about a 1/4 cup of toasted sliced almonds. They gave the muffins a nice crunch and complimented the fresh raspberries well. I must have a smaller muffin size, this made about a dozen and a half for me. Thanks, Marz!
     
  3. Hmm...my review seems to have disappeared...trying again...I made these with 1% milk, 2/3 cup Splenda brown sugar blend and frozen raspberries. They are good attractive muffins. Mine turned out with a heavier texture, mildly sweet and with a light lemon flavor. The tang came from the raspberries. I'm not sure if the almond extract or cinnamon added anything as I couldn't taste them. Made for the Photo tag game.
