My mom use to make this jam every summer to use all those extra green tomatoes. After I got over the fact that it was made with tomatoes and tried it I couldn't get enough. Now, I thought I would share it with you. Enjoy!
- 2 cups green tomatoes, ground or grated
- 2 cups sugar
- 1 (3 ounce) package raspberry Jell-O gelatin (or strawberry, etc.)
- Grind or grate tomatoes.
- Mix tomatoes and sugar.
- Bring to a boil.
- Boil 15 minutes.
- Remove from heat.
- Add jello and stir well.
- Seal in jars or freeze.
I was pretty skeptical about this at first, but with 10lbs of green tomato--what the heck! I used sugar-free strawberry jello and it turned out GREAT! It looks AND tastes just like strawberry jam. Will definately keep this recipe!
This is a great recipe. My husband loved it . Can't wait to try it with Strawberry Jell-O.
This is a great recipe and a great way to use up those green tomatoes. This is one of our must makes every year, and the kids love it!
