Raspberry Dream Delight

"A beautiful fresh frozen dessert, perfect on its own or used as a garnish on another dessert. Very simple and effective, and tastes wonderful!! It is a lovely light dessert, perfect for after a rich or spicy meal. I found this recipe on a pack of McCain's frozen raspberries, and it is a firm family favourite."

  • In a blender combine fruit, condensed milk, cream, lemon juice, sugar and honey.
  • Blend at high speed until smooth.
  • Transfer to a plastic container with an airtight seal, cover and freeze 4 hours or until solid.
  • Let stand a few minutes at room temperature before serving.
  • Garnish with whole fruit pieces and a sprig of mint.
  • Alternatively : pour mixture into ice tray mould and freeze 4 hours to create a delicious treat for your kids, or place the frozen cubes into a fresh fruit salad just before serving.
