Raspberry and Mascarpone on Brioche

- 4 thick slices brioche bread
- 4 tablespoons mascarpone
- raspberries (2 handfuls)
- 2 teaspoons demerara sugar
- vegetable oil, for brushing
directions
- Preheat a Panini grill.
- Spread two slices of the bread with the mascarpone cheese.
- Place raspberries on top and sprinkle with the sugar.
- Top both sandwiches with the second slice.
- Brush both sides of the Panini with a little oil and grill in the preheated Panini grill for 2 minutes or according to the manufacturer’s instructions.
- The bread should be golden brown and the filling warmed through.
