ingredients
- 2 slices bread
- 1⁄2 teaspoon mustard
- 1 dash salt
- 1⁄4 teaspoon cayenne pepper
- 1⁄4 teaspoon Worcestershire sauce
- 1⁄2 ounce butter
- 3 ounces grated cheddar cheese
- 1 tablespoon beer or 1 tablespoon milk
directions
- Toast the bread on one side.
- Combine all other ingredients.
- Spread on untoasted side of bread.
- Brown under a hot broiler.

This was a great weekend lunch that we won't be having too often because of the artery-clogging fat in it but it was easy and very tasty! I chickened out and used the milk instead of the beer and used a spicy brown mustard. My boyfriend said it had just the right blend of spices. Thanks for posting!

Hello Queen Dragon Mom, what a treat! Cayenne pepper and all, I loved it! Served it on English Muffins, what else? :)It was very interesting because it was offered in the "Cafe Ponce" but without the beer; however, there were some made with beer ~ the business manager, dietician and I had lunch in the conference room and everyone that passed by said, "What is that?". I have a recipe for this as well but today we tried yours. Lovely!! Thank you and you are welcome any time, Diane :=)

Great Traditional recipe which I used to make all the time. You will ALWAYS grill(broil)these, not as one reviewer said........that's the secret of Welsh Rarebit....grill(broil) until bubbling and brown.This is a perfect recipe for rarebit. Thanks for reminding me that I have to make them again soon!
