Great cookies! I used all purpose flour, butter, and omitted the nuts. I baked them for 10 minutes and they were golden and delicious. My friends loved 'em!

These cookies are much better and easier to handle than my other recipe for Ranger cookies. I substituted coconut for the pecans and added a cup of chocolate chips. I also used two cups all-purpose flour. The dough handled very well, but became dry and crumbly near the bottom of the bowl. I think next time I make these, I'll use butter for half, or maybe all, of the shortning, or maybe cut the regular flour back to 1 3/4 cups. The baking time for me was about 12 minutes. This is definitely a keeper!

This was so easy to make, fast, and it came out so well! Great texture (not too soft or too hard). I used butter and added coconut, but skipped the nuts (just personal preference). This had a nicer texture than most other oatmeal cookie recipes I tried.
