THIS IS A KEEPER! I am currently trying the weight watchers flex program to lose a little (okay - more than a little!) and was looking for a filling, low points breakfast. To lower the fat content, I used fat free refried beans and salsa, replaced one of the eggs with two egg whites, and used 50% reduced fat cheddar cheese. I warmed the beans and salsa mixture in the micro to shorten time and lessen messy pans. It turned out great - very filling and a change from the usual breakfasts. My calculation is 5 points made this way. THANKS FOR A GREAT IDEA!!!!!!!!!
Was looking for a new way to make Sunday eggs when I stumbled on this recipe. I made a lighter version of this and enjoyed every bite, starting with replacing 1 of the eggs with 2 egg whites. Final result was not really a surprise as I made fat-free refried the beans leftover from a favorite recipe and some super salsa brought home with me from New Mexico. The cheese was a reduced fat cheddar - well 2 out of 3 ain't bad. Guess the point is the ingredient selection here is really important - skimp on the beans and salsa and you'll be dissappointed. Use good stuff and you'll be as happy as I was. Great combination. Thanks.
