Ranch Baked Potatoes

"I received this recipe in on of my daily recipes from "Peak of the Market", our local produce company. They have such a yummy flavor because of the ranch dressing."

  • Bake potatoes at 400F for 1 hour.
  • Slice in half and scoop out insides, leaving a small amount in shell.
  • Mash potatoes, add sour cream, dressing and bacon bits; beat until fluffy.
  • Stir in 1 cup of cheese.
  • Spoon into potato shells, top with remaining cheese.
  • Bake at 350F for an additional 20 minute.

  1. I was surprised at how creamy these were! I did not have any bacon bits, so I fried 1 slice of bacon until crispy then crumbled that into the potato mixture. I also added some chives. I will be making these again!

  3. These potatoes are absolutely wonderful! I didn't have any bacon bits, so I cooked some bacon that I had on hand. They turned out perfectly. I had never made twice baked potatoes until these and now they'll become a staple in our house. Thanks so much for sharing, Mel.
     
  4. Delicious potatoes! I baked the potatoes early in the day and mixed together the potato topping and put it in the fridge. While the rest of my dinner was cooking I mashed the potatoes and mixed in the topping and stuck then in the oven to heat them. I added equal amounts of ranch dressing and sour cream and also mixed in some fresh ground black pepper. My DH told me I could make this again! Thanks for posting your recipe Melanie!
     
  5. So very creamy and cheesy! What more could one want in a stuffed potato? I added a little bit of chives to my filling and it was very nice. My daughter asked for seconds, and she rarely does that with anything. Thanks for posting!
