I tasted this at a potluck dinner. I thought it was great. Crunchy and sweet. Yummy! Who knew Ramen tasted so good?

  1. Mix sugar, oil & vineger together.
  2. Break up the noodles.
  3. Cut onions.
  4. put cashews and slaw mix together.
  5. Pour dressing over salad and refrigerate for 2 hours.
  6. Add extra noodles before serving.

This was just the coleslaw recipe for my husband, he loves crunch and this had plenty of crunch. I liked the noodles and cashews, a nice change. I think it was a tad sweet for me, so next time might cut back on the sugar just a little.

A very nice crunchy salad and especially loved the use of green onion, coleslaw and cashews here. I did use less sugar and less oil, it all mixed up just perfectly. I figured I would only use 2 tablespoons of sugar, and 2 tablespoons of oil, and if I needed more I could use more. But truly it was tasty without all the extra's and perfect balance of crunchy, vinegar and sweetness. Thanks, lena! Made for PAC 2008.
