  • In a large mixing bowl, dissolve the yeast in the warm water. Stir in the salt, sugar, and shortening, plus 2 cups of flour and rolled oats. Beat this mixture for 3 minutes.
  • Stir in the last 2 cups of flour and the raisins; mix till batter is smooth and satiny. Cover with a clean cloth and let rise in a warm place until doubled in size.
  • Once doubled, stir down the batter while counting slowly to 15, then spoon the batter into 2 greased loaf pans; cover with a cloth, let rise before baking.
  • Bake in a 350F oven for 50 minutes.

Why "SoupCookie"? My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
