My family loved this cookie! The recipe is easy to use. I doubled the amount of raisin filling in each cookie and gently pressed the top cookie layer over the filling. The cookies really do increase in size, so give plenty of room when placing on baking sheet. Make lots because they disappear quickly!
Oh I'm so glad I came upon this recipe. I knew I would like it immensely as I also love datefilled cookies. They remind me of when I was a kid and when my gramma would make these and the date filled. I made these especially for my dad as he love anything raisin and also mincemeat pie. They are superb. I cut the recipe in 1/2 as I really didn't need 48 cookies, although I did read your directions about being able to freeze them as well. These will make a lovely addition for holiday trays.
