- 2 cups raisins
- 1 cup water
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon cinnamon (optional)
- 1⁄4 teaspoon nutmeg (optional)
- 1 cup margarine
- 2 cups brown sugar
- 3 eggs (beaten)
- 1 teaspoon baking soda
- 4 cups flour
directions
- Preheat oven to 350°F.
- Boil raisins in water for 5 minutes.
- Cool then add baking soda. Let stand then add vanilla cinnamon and nutmeg.
- Cream together margarine and sugar then add eggs, baking powder and flour.
- Add raisin mixture to flour mixture and stir together well.
- Drop by teaspoon onto cookie sheet and bake for 12 minutes.

These cookies were made as one of a handful of items served for a small group I host each month, otherwise I'd have eaten them all myself! I like the spices, but cut the amount of each, using only 1/2 tsp of cinnamon & 1/8 tsp of nutmeg. LOVE THOSE RAISINS! The cookies were a nice change from the usual oatmeal-raisin cookies. Thanks so much for making this recipe available!!
